SWEET POTATO CASSEROLE

3 cups sweet potatoes, mashed 2 eggs, slightly beaten
1/4 to 1/2 cup margarine 1 cup golden raisins
1/2 to 1 cup sugar 1/2 cup flaked coconut
1 teaspoon vanilla Serve as a side dish or dessert!

  

Combine sweet potatoes, margarine granulated sugar, vanilla, eggs, raisins and coconut. Spoon mixture into a lightly greased, shallow 8"x8" baking dish. Prepare Topping (recipe follows). Spread mixture over top. Bake at 350 degrees F. (preheated) for 30 minutes. Makes 4 to 6 servings. Mrs. Hoecker is the wife of Mr. Harold Hoecker who founded the council in 1961 and worked as the Executive Secretary /Treasurer for 40 years before retiring.

  

Topping
  
2 to 4 tablespoons margarine 1 cup pecans, chopped
1/2 to 1 cup light brown sugar 1/2 cup flour
  

Blend margarine and brown sugar. Stir in pecans and flour.

 

 

ADRIENNE BARBEAU'S YAMS

   
7 lbs. yams, boiled tender, 1/3 cup honey
  cooled & peeled  1/2 teaspoon nutmeg
3/4 cup margarine, divided 1/2 teaspoon cinnamon
pinch salt 3 Pippin or Granny Smith apples,
1/2 teaspoon pepper   peeled, cored & thinly sliced

  

Mash yams with 1/4 cup margarine, salt and pepper. Melt 1/4 cup margarine with nutmeg and honey. Pour mixture into bottom of baking dish and layer with apples. Top with yams and dot with remaining margarine. Bake at 350 degrees F. (preheated) for 45 minutes or until bubbly. Makes 18 servings. Praise the Lord and share the yams.

CHERRIED SWEET POTATOES

(Mrs. Joyce Leichtman, Dioux Falls, SD)

   
1 (29 oz.) can sweet potatoes, 3 tablespoons margarine
  drained (reserve juice)  1/4 cup dark Karo or maple syrup
1 (21 oz) can cherry pie mix 1/4 cup blackberry brandy
1/4 cup frozen orange juice pinch cinnamon
  concentrate salt & pepper to taste

  

Combine reserved sweet potato juice, cherries, orange juice, margarine, syrup, brandy, cinnamon and salt and pepper to taste in a large saucepan. Cook over medium heat for 30 minutes or until sauce thickens, stirring occasionally. Add sweet potatoes and heat through. Enjoy! Makes 8 servings. Joyce created this recipe many years ago and now it is her family's favorite." She suggests making this dish the day before and microwave to save time and burner space. This recipe also doubles easily. Joyce has been married to her husband John since 1954. They have 6 married children and 12 grandchildren, 6 boys and 6 girls.
