1 cup sweet potato, mashed 1 teaspoon vanilla extract
1 cup evaporated milk 1/2 teaspoon salt,
3/4 cup light brown sugar, firmly packed 1/2 teaspoon ground ginger
2 large eggs, lightly beaten 1/2 teaspoon ground cinnamon
1/2 cup dark corn syrup 1/2 teaspoon fresh nutmeg, grated
2 tablespoons margarine, melted 1-1/2 cups or 6 oz. pecans, chopped
1 tablespoon hazelnut liqueur (optional) lightly whipped cream (optional)


Prepare Crust (recipe follows). Combine sweet potatoes, evaporated milk, brown sugar, eggs, corn syrup, margarine, liqueur, vanilla, salt and spices . Beat with a wire whisk or wooden spoon to blend. Pour mixture into prepared crust and sprinkle with pecans. Bake for 40 to 45 minutes or until knife inserted in center comes out clean. Cover with foil for the last 10 to 15 minutes to keep top from becoming overly browned. Cool on wire rack. Top with a dollop of whipped cream, if desired. Makes 10 servings.


1-1/4 cups all-purpose flour 1/2 cup solid vegetable shortening
2 tablespoons granulated sugar 4 to 5 tablespoons ice-cold water
pinch of salt

Combine flour, 1 tablespoon granulated sugar and salt . Using a pastry blender or two knives, cut in shortening until mixture resembles coarse crumbs. Tossing with fork, add enough ice-cold water to hold dough together. Turn dough onto a work surface and knead 2 or 3 times just until a ball forms. Wrap in plastic and refrigerate for 45 minutes. Turn dough out on a lightly floured surface and roll into a 12" circle. Fold dough into quarters and place in a 9" pastry dish. Trim, leaving a 1" border. Crimp or decoratively flute edge. Sprinkle crust with remaining 1 tablespoon sugar. Line with aluminum foil and fill with dried beans or rice. Bake at 400 degrees F (preheated) for 10 to 15 minutes or until crust is golden brown. Remove from oven and reduce heat to 375 degrees F. Remove foil and beans from crust.
